Ingredients
1 box Simple Mills Banana Muffin Mix
3 eggs
1/3 cup melted coconut oil
2 ripe bananas, mashed
1/4 cup chia seeds
1/2 cup Milk (I personally use unsweetened almond milk but any kind works!)
Optional: 1/4 cup Lily’s dark chocolate chips (low sugar)
Instructions
Preheat your oven to 350°F and line a muffin tin with liners.
In a large mixing bowl, combine the muffin mix, eggs, and melted coconut oil according to the box instructions.
Add in the mashed bananas and chia seeds, stirring until everything is well incorporated and you have a smooth batter.
If you’re making them a little more indulgent, fold in the dark chocolate chips.
Evenly distribute the batter into the muffin liners, filling each about 3/4 of the way full.
Bake for 20–25 minutes, or until the tops are golden brown and a toothpick comes out clean.
Let cool slightly… but honestly, these are best enjoyed warm.
