Better-For-You Date “Snickers” (Naturally Sweet + Nutrient-Dense)

If you’re craving something sweet but still want to nourish your body, these Date “Snickers” are the perfect balance of indulgence and intention. Made with simple, whole-food ingredients, this recipe doesn’t just satisfy a candy bar craving—it delivers a variety of nutrients and phytonutrients that support your body in ways traditional sweets simply don’t.

At the base of this recipe are Medjool dates, AKA nature’s caramel. They’re rich in polyphenols and flavonoids, powerful antioxidants that help combat oxidative stress and support cellular health. Dates also provide potassium, magnesium, and fiber, making them supportive for digestion, hydration, and steady energy without the blood sugar crash.

The creamy layer—whether you choose peanut butter or cashew butter—adds more than just flavor. These nut butters are packed with heart-healthy monounsaturated fats and plant-based protein, along with bioactive compounds like resveratrol (especially in peanuts) that support cardiovascular health and inflammation balance.

Adding chopped nuts like pecans, walnuts, or peanuts brings that classic crunch while boosting nutrition. Walnuts are known for their omega-3 fatty acids, while pecans are rich in flavonoids and vitamin E, both of which help protect cells from oxidative damage and support brain and heart health.

The chocolate coating ties everything together while adding its own functional benefits. Dark or semi-sweet chocolate contains cocoa flavanols, compounds linked to improved blood flow, brain function, and even mood support. Using Lily's chocolate is also my favorite hack as it contains 70% cocoa to maximize phytonutrient intake and contains zero grams of sugar .. you cant beat that!

To create that smooth, rich chocolate shell, a touch of coconut oil or butter is melted in—adding healthy fats and enhancing nutrient absorption, while also giving the chocolate that silky finish. And if you’re a fan of that sweet-and-salty combo, a sprinkle of flaky sea salt not only elevates the flavor but also provides trace minerals that support hydration and balance.

The end result? A treat that tastes indulgent, satisfies your sweet tooth, and still delivers real, nourishing ingredients your body can actually use.

So without further ado let's get into the recipe!

Ingredients

  • 12-16 Medjool dates, pitted

  • ⅓ to ½ cup unsweetened creamy peanut butter (or cashew butter)

  • ½ cup raw pecans, walnuts, or peanuts, chopped

  • ½ cup Lily's dark chocolate chips

  • 2 teaspoons coconut oil or 1 tablespoon butter

  • Flaky sea salt, for garnish (optional)

Instructions

  1. Prepare the dates by slicing them open (if not already pitted) and laying them flat.

  2. Stuff each date with about 1–2 teaspoons of peanut butter, depending on the size.

  3. Add the crunch by gently pressing chopped pecans, walnuts, or peanuts into the peanut butter filling.

  4. In a microwave-safe bowl, melt the chocolate chips with the coconut oil (or butter) in 20-second intervals, stirring between each, until smooth and fully melted.

  5. Drizzle the melted chocolate over each stuffed date, coating as much or as little as you like.

  6. If desired, sprinkle with flaky sea salt for that perfect sweet-and-salty finish.

  7. Allow the dates to set at room temperature or in the refrigerator until the chocolate hardens.

  8. Serve and enjoy!
